FATAYER WITH SPINACH

Ingredients


FOR THE DOUGH

3 cups of all-purpose flour

1/3 cup of vegetable oil

Salt to taste

1 cup of warm water

FOR THE SPINACH FILLING

2 bunches of spinach, minced

4 onions, minced

1 tbsp sumac

Juice of 2 lemons

1/4 cup olive oil

½ tsp citric acid

A dash of baking soda

1/4 tsp chili powder

2 tsp sumac

Salt to taste

 

Instructions


TO PREPARE THE DOUGH, combine the flour, vegetable oil, salt, and water. Knead the dough well and let it rest for 30 minutes at room temperature. FOR THE SPINACH FILLING, Boil the spinach for 10 minutes, then strain to dry. In a cooking pot, pour 1/4 cup of olive oil and add the onions. Fry the onions until tender. Add the spinach and cook until it gets soft for 2 to 3 minutes. Add salt, sumac, lemon juice, chili powder, and citric acid to the spinach mixture. Strain the spinach mixture and let it cool down. TO SHAPE THE FATAYER, Roll the dough into circular shapes, fill with the spinach mixture, and shape into triangles or the shape of fatayer. Place the filled dough on a baking tray and bake in the oven for 15-20 minutes at 375°F (190°C).
