Ingredients
1 kilogram of fresh mulukhieh leaves,
washed and dried
8 mashed garlic cloves
6 diced or sliced onions
5 sliced garlic cloves
1 hot minced green chili pepper
1 cup of lemon juice, or to taste
1/4 cup of olive oil
2 cups of water + 1 tbls salt
Instructions
INSTRUCTIONS In a cooking pot, fry the mulukhieh with a driz- zle of olive oil. Start with half of the quantity and fry until tender. Set aside. Then, add more oil and fry the other half. In another cooking pot, pour 1/4 cup of olive oil. Fry the onion wings with the sliced garlic until tender. Add the fried mulukhieh leaves and stir well for 10 minutes. NOTES: Once the leaves are well fried, pour over the lemon juice mixed with the mashed garlic, chili, salt, and 2 cups of water. Mix well with the mulukhieh and let it cook for another 30 minutes. Cover it, lower the heat, and let it cook for another 1 hour. Stir slowly every 10 minutes. Adjust salt and lemon juice and continue cook- ing on low heat until the sauce is reduced and the mulukhieh is cooked. 6 To be served at room temperature. Garnish with sliced lemons and serve cold with green onions. 78
